Romantic Monday - Lemon 7-Up Pound Cake

1 cup butter, room temperature
½ cup butter flavored shortening
3 cups sugar
5 eggs, room temperature
1 teaspoon vanilla extract
1 teaspoon almond extract
1 teaspoon lemon extract
3 cups cake flour, sifted
1 cup 7-Up soda, room temperature
GLAZE: 1½ cups powdered sugar
2 tablespoons fresh lemon juice

  1. Preheat oven to 325 degrees. Grease & flour a 10-inch Bundt pan (tube pan). In a large bowl with an electric mixer, beat together butter, shortening & sugar on low speed for 1 minute. Beat in the eggs one at a time. Add vanilla, almond & lemon extract to bowl. Slowly add flour & 7-Up into the bowl. Beat for 3 minutes on medium speed.
     
  2. Pour batter into the pan & bake for 70-80 minutes, or until a toothpick is inserted into the center of the cake & comes out clean. Allow cake to cool for 15 minutes before removing it from the pan.
     
  3. In a small bowl blend powdered sugar & lemon juice. Drizzle the glaze over the top of the cake.

    servings: 14 / prep time: 20 minutes / cook time: 80 minutes
